Apricot, Brown Ale and Garlic Mustard Fruits Makes 4 cups 500g dried apricots 500mls white wine vinegar 2 cups sugar 2 tablespoons Wild Appetite Brown Ale and Garlic Mustard 2 teaspoons dried mustard powder 1 teaspoon sea salt Method: Cover apricots with warm water and soak for an hour. Strain and reserve the soaking liquid. Place remaining ingredients and ½ cup of the soaking liquid in a saucepan and stir over heat until sugar dissolves and then boil for 5 minutes. Add apricots and simmer for 15 minutes until the fruit is soft. Store in clean jars. Refrigerate after opening. Perfect with Christmas ham or turkey. |
