8 kg leg of ham
350g jar of Wild Appetite Lemon Lime & Orange Marmalade
2/3 cup brown sugar
2 tablespoons Wild Appetite Brown Ale & Garlic Mustard
2 tablespoons Wild Appetite Sweet Thai Chilli Sauce
Method:
Preheat oven to 150°C. Line a roasting pan with baking paper. Remove rind from ham by carefully easing fingers under skin and gently pulling it back. Use a sharp knife to score the ham fat in a diamond pattern, cutting no deeper than 5mm. Place ham in roasting pan. Combine remaining ingredients and spoon half of the mixture over the ham surface. Cook for 45 minutes then spoon over remaining glaze and cook for a further 45 minutes or until golden. Serve hot or cold with Apricot Mustard Fruits (see recipe)
