Winter Pork Sausage and Apple Casserole

I have always loved the taste of pork and apple and cooking this pork sausage recipe in a slow cooker creates a tasty dinner that wont break the budget. Living in a busy household I prepare the vegetables the night before and then all I have to do in the morning is brown off the onions, garlic and celery and its all in the slow cooker within10 minutes. I walk out the door knowing that dinner is sorted.

Serves 4
Ingredients:
1 tbsp olive oil
2 medium onions, peeled and sliced into quarters
2-3  garlic cloves, peeled and sliced
2  celery sticks, sliced
8  pork sausages (Gluten free if required)
200g carrots, peeled and sliced (chunky)
3  medium sized cooking apples, peeled and sliced (I use Granny Smith apples)
200g courgettes, sliced
salt and fresh ground pepper to season
1 cup chicken or vegetable stock
1 Urban Appetite Roasted Capsicum and Mild-Chilli Sauté Sauce

Sauce
1 tsp dried thyme
½ tsp dried rosemary
½  tsp dried sage
2 tbsp dried parsley
 
Heat Newwave bowl on brown, add the oil, onion, garlic and celery and cook for

about 5 minutes, turning often.

Once the onions are slightly translucent add the sausages. Arrange the carrots, apple

and courgettes over the top of this and season salt and pepper to taste. Pour the

stock and simmer sauce into the bowl.  Sprinkle with the herbs, stir in trying not to

disturb the sausages too much. Once it is simmering then turn off the power.

Turn the power on and set timer to 5 hours. Select the slow cooker option, close the

lid, lock and make sure it is set to Airtight.

After 5 hours the cooker will switch off the slow cooking option and will automatically

go to the “Keep Warm” option.

Just before serving check and adjust the seasoning with salt and pepper if needed. I

serve this casserole on a bed of creamy mashed potato and Kumara. I do not thicken

the sauce as I like to let it soak into the mash.
